Zimbra has a full XML/JSON SOAP API, which is in fact how the web client speaks with the server. It also ships with a Java abstraction of the APIs if you don’t want to go down to the SOAP level.
It also sports a REST interface for adding or fetching data in a wide variety of formats (CSV or vCard for contacts, HTML or free/busy or iCal for tasks/calendar, RSS or ATOM for calendar or mail, XML or JSON for everything, plus fetching messages singly or as a ZIPfile).
And, of course, it speaks POP3 and IMAP4.
